We're Different than any other Bakery
I have tried many bakeries all over the country--it's my favorite thing to do when traveling--and I've yet to find one that has the same ingredient standards as we do.
It's all about the sugar! (And flour.)

We all know the feeling after eating processed sugar and carbs; the crash that inevitably follows. Many bakery products look and taste great and are probably cheaper, but at what cost? I got tired of being in this industry and never wanting to eat my own products because of the after effects--zero energy, high blood sugar, weight fluctuation, daily sweet cravings, always hungry, always tired (not to mention hyper kids when you feed it to them!) That's when I began experimenting with raw and organic sugar. I couldn't believe the results! As my body grew accustomed to this new way, I never wanted to go back.
I knew I had to build my business on this conviction, even if it cost me more. I believed there were others just like me who loved sweets but also valued their health.

White sugar and white flour are some of the main contributors to disease and chronic health issues. They are also some of the cheapest commodities, which is why sweets made with them are so cheap and easy to get. (Sam's Club cookie platters, anyone?)
I honestly started feeling like a drug dealer and a hypocrite selling people food I wouldn't eat myself. I couldn't do it anymore!
I took the leap and have never looked back. The customers who are supposed to find us, find us, and we've even attracted many who simply love how much better our stuff tastes, even if they don't care that it's healthier.
Sugar and flour--the two main ingredients in most baked goods--we pay double for at our bakery. White sugar is $0.70/lb. while organic sugar is currently around $1.45/lb. which is a huge difference when talking about products with an already thin profit margin. However, we have countless customers tell us: "I don't feel terrible after eating your sweets!" and this is exactly why we do it!

If you're wondering the difference in organic sugar and white sugar, here is the simplest explanation:

Organic sugar has nutrients your body can actually use for energy, while white sugar is empty calories (aka junk food!).
Organic cane sugar is produced from organically grown sugarcane. It is the healthiest type of cane sugar and is naturally processed, which means that there were no chemicals involved. As a result, it actually has health benefits and contains additional vitamins (A, B1, B2, B6, C) and minerals, such as sodium, calcium, magnesium, and iron, and it is packed with amino acids. Refined sugar only contains sucrose and glucose, while its organic equivalent will retain some fructose as well. It also has an enhanced flavor profile due to the presence of molasses, which offers the sugar a characteristic caramelized texture that makes it perfect for baking.
White sugar, in addition to being processed in a way that removes all traces of its natural molasses content, is refined through a multi-step process using sulfur dioxide, phosphoric acid, and calcium hydroxide. This refining process removes any impurities from the sugar, as well as the natural molasses that gives natural organic sugar its varying shades of brown color. This exacting process of purification also removes the elements that provide flavor to sugar, leaving only sweetness. (And don't be fooled by tricky marketing labels of Cane Sugar. It may be less processed than white sugar, but it still involves synthetic pesticides and chemicals.)
The result in eating sweets made with organic cane sugar and unbleached flour--which is similar in its health benefits--is a wholesome feeling you just won't get by eating something made with processed, cheaper ingredients. You will actually feel satisfied and full because of the nutrients instead of empty and hungry for something more substantial.

It's still sugar and we won't sit here and tell you it's it's health food, but we can say with confidence it is better for you than treats from other bakeries.

You will also never find any un-natural products in our kitchens like margarine, canola oil, high fructose corn syrup or MSG.
We're picky about using real ingredients your body recognizes. Even our vegan products, we make sure contain the best ingredients possible.
We're also still always learning and growing. For instance, we had a customer bring to our attention that buttermilk actually contains "Carrageenan" which has proved to have adverse effects to humans. Who knew!? (Currently googling "natural buttermilk options without carrageenan.")
